AOC Grignan-les-Adhémar

Terroir : 

This cuvée is made from vines that are 48 years old. They flourish on a chalky clay soil entirely covered with rolled pebbles. The vines are all trellised and the yields are low: 35hl / Ha.

Vinification : 

The grapes are picked at full maturity. The cuvée Terre des Sages is vinified in thermo-regulated concrete vats. The vatting and maceration take place over 3 weeks. The harvest is completely destemmed. Two daily pumping allow a regular oxygenation of the must and a soft extraction of tannins and aromas.

Blend : 

This cuvée is a blend of 95% Syrah and 5% Grenache.

Tasting : 

Deep red with purple reflection. Powerful nose developing aromas of red fruits and spices. On the palate, spices blend with cherry aromas.

Food and wine pairings : 

The wisdom would be to taste this wine with a rosmary jugged hare, a shank of lamb confit and a fine chocolate.

Cellaring potential : 

from 2 to 6 years.
